Blackberry Prosciutto Bites

Mouthwatering blackberry appetizer perfect for a large party

Serves: 16

Ingredients:
¾ cup balsamic vinegar
2 tablespoons sugar
12 oz blackberries
8 oz goat cheese
2 teaspoons garlic
¼ teaspoon dry Italian seasoning
¼ teaspoon coarsely ground black pepper
1 tablespoon milk
4 oz thinly slices prosciutto
1 loaf French baguette

Instructions:
   1. Preheat oven broiler
   2. Slice baguette into 16 diagonal slices, place into broiler pan
   3. Broil baguette slices for about 2 min or until golden brown
   4. Flip baguette slices and broil other side for about 2 min or until golden brown
   5. Pour balsamic vinegar into small saucepan
   6. Stir sugar into balsamic vinegar
   7. Boil vinegar mixture over medium heat for 10 minutes or until reduced to ½ cup
   8. Remove mixture from heat, stir in blackberries gently, try to keep them from breaking open
   9. Set aside blackberry mixture to cool
   10. Put goat cheese, garlic, Italian seasoning, pepper, and milk into a blender/food processor and blend until smooth
   11. Brush liquid from blackberry mixture onto baguette slices
   12. Spread about 1 ½ teaspoon goat cheese mixture onto each baguette slice
   13. Cut prosciutto slides crosswise into 3 pieces
   14. Top each baguette with a slice of prosciutto
   15. Top each baguette slice with whole blackberries from the balsamic reduction
